Plain Chicken Says Thanks

My niece officially won the Today.com Food Challenge. As she said in the comments section elsewhere, "I won! Thanks to everyone that voted!!"

Here's a link to the article at Today.com, "Home Chef winner credits mom for food inspiration." Her mom, by the way, is an inspiration, food-wise and otherwise-wise.

(If you can't indulge in a little blatant nepotism on occasions such as this, then what is a blog for?) (No, really, what is a blog for?) (And no, the cat's not on the menu.) (Although ... cat ... grill ... hmm. I'll check into this.)

Say, Who, if you want the best recipe from Plain Chicken, I strongly suggest you make a batch of these cookies:

Butterfinger Cookies
adapted from Food.com
(Printable Recipe)
1/2 cup butter, softened
3/4 cup sugar
3/4 cup brown sugar, firmly packed
2 large egg whites
1 1/4 cups chunky peanut butter (or smooth)
2 teaspoons pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
5 (2.1 ounce) butterfinger candy bars, chopped

Preheat oven to 350°F degrees. In a mixing bowl, cream butter and sugars. Add egg whites; beat well. Blend in peanut butter and vanilla. Combine flour, baking soda and salt; add to creamed mixture and mix well. Stir in candy bars. Shape into 1 1/2-inch balls and place on a baking sheet.

Bake at 350° for 10-12 minutes, or until cookies just start to turn brown. Do not over bake! Let sit on cookie sheet for a few minutes, before transferring to a wire rack. Cool completely.


One note: don't use reduced-fat peanut butter, which we did once by mistake -- the cookies still taste good, but they won't cohere and you wind up with a very chewy sheet of cookie-like substance.

Congratulations Steph @Plain Chicken, but we already knew what the entire country now knows; it was no contest. These are the times when I miss not being plugged into every technology available. I'm sorry I couldn't legitimately vote for Mrs. Chicken Legs, but I voted for her in spirit.
